~Day 2 Betty~

Ok second day,things are still going good. this morning for breakfast we had Oatmeal and toast with peanut butter and a banana. This is basically what I eat for breakfast all the time. I haven't drank milk for years so drinking soy milk is no different at all. I did make my daughter a grilled cheese sandwich for lunch today and for one second the smell of the cheese drifted in my direction. LOL! A big challenge in this is cooking for my two non vegetarian children.

For Dinner we made brown Rice and Tahini with chickpeas and artichokes. I got this recipe from the book Super market Vegan. It turned out fantastic. Super creamy from the tahini with a nutty flavor and extremely filling and delishes. Still wondering what I'm missing out on by not eating meat and dairy when I'm eating all of this good stuff.
