Hello all! It’s the weekend so with some extra time on our hands we decided to cook up a nice breakfast (bagels and cereal are getting old).

I made us a delicious tofu scramble. It was a really simple dish and an easy way to use up all of the extra veggies sitting around the fridge. I used zucchini, sliced shrooms, tomato, scallions, garlic sautéed and then I added half a block of tofu crumbled ( the almost egg ) and through in some of our faux cheese. This turned out great! I also sliced up some of Francs chorizo sausage and added some whole wheat toast.

We had a great day today experimenting in our kitchen with all of the new Veggie recipes we have. I have always really liked taking recipes and fooling around with them to make them my own. I tried to make a vinegar potato salad today but it turned out way to mustardy for my taste, but for some reason Franc liked it :-)  I really think with a little bit of thought and planning we are doing quite well and neither one of us is really missing or craving anything.
